Double Chocolate Chip bikkies (high-fibre, dairy-free)

Ingredients (makes about 24 bikkies)

1 cup oil (light-flavoured olive or canola oil are best)

½ cup brown sugar

¼ cup granulated sugar

1 tsp vanilla extract

1 tsp cinnamon (optional- I think cinnamon makes everything taste better)

1 tsp instant coffee powder (also optional)

1 tsp baking powder

1 tbsp cornflour

2 eggs

1 ¼ cups high fibre white flour

1 cup wholemeal flour

1/3 cup cocoa

1 cup dark chocolate chips (check to make sure they are dairy-free if that is important to you)

Instructions

– preheat oven to 170°C

– line two baking trays with baking paper

– beat together oil, sugars and vanilla

– add baking soda, eggs, cornflour, coffee and cinnamon

– beat to combine

– add flour and beat until just combined

– stir through chocolate chips

– shape into balls (about 1 tbsp of batter each) and flatten a little onto baking trays. Leave a small gap between them (they won’t spread a lot).

– bake for 10-15 minutes taking care not to burn them

– cool on a rack

– store for about 1 week in an airtight container
