Cranberry Ripe Slice
Another great one for lunchboxes.
200g shredded coconut (desiccated coconut could also be used, but the texture will be a little different and you may need less milk to bring it together)
100g caster sugar
30g dried cranberries (pulsed in a food processor or chopped roughly)
2 tbsp olive oil (or a more neutral flavoured oil such as canola)
1 large egg
1/3 cup milk of choice
1 tsp vanilla extract
Preheat oven to 160°C. Line a dish which is approximately 8cm X 26cm (or something similarly sized) with baking paper. Then it couldn’t be simpler. Mix all ingredients together and press into lined dish. Bake for about 15 minutes or until browning around edges. Remove on baking paper to cooling rack. Allow to cool before cutting into squares.
