Chocolate Muesli Slice

This slice is a little bit indulgent, but still full of good things and high in fibre.


1 cup coconut oil

1 cup cacao or unsweetened cocoa

3 tbsp honey

1 cup rolled oats

1 cup shredded coconut

2 cups nuts (I’ve used a mixture of walnuts, macadamias and almonds but pistachios, pecans, cashews and peanuts are also good)

1/2 cup sunflower seeds

1/2 cup pumpkin seeds

1/2 cup dried apricots (cut into small pieces)

1/2 cup dried cranberries



– line a baking tray (about 25x35cm) with aluminium foil

– toast oats, coconut, nuts and seeds then set aside to cool

– melt coconut oil and honey over low heat

– remove from heat

– stir through cacao then stir in rest of ingredients

– press evenly into lined baking tray

– place in freezer for about 1 hour to set

– cut into bite-size portions and store in fridge
