Double Chocolate Oat Bikkies


These bikkies were a hit with everyone (except for my daughter who would rather eat a dried smear of toothpaste on the bathroom sink than something that I have baked). This recipe was inspired by Double Chocolate Chip Oatmeal Cookies over at Kitchen Treaty.

½ cup coconut oil

½ cup packed dark brown sugar

1 large egg

1 tsp vanilla extract

½ cup high-fibre white flour

1/3 cup cocoa powder

½ tsp salt

¼ tsp baking soda

1 ½ cups rolled oats

1 cup dark chocolate chips



– preheat oven to 160°C. Line a tray with baking paper.

– melt coconut oil and mix with vanilla and brown sugar

– add egg and mix in well

– in a large bowl, whisk together the flour, cocoa powder, oats, salt and baking soda

– add the wet ingredients to the dry ingredients and mix well

– stir through the chocolate chips

– put dough in fridge for about 15 mins

– roll walnut sized balls of dough (makes about 24) and place them, with enough room to spread a little, on baking tray


– bake for 10-15 minutes until they appear set and no longer wet (they’ll set a bit more after they cool)

– cool on tray for about five minutes before transferring to a rack to cool

– will keep for up to a week a room temperature
