Veggie stacks on wholemeal English muffins

These are simple and delicious, but they do take a bit of preparation.

 

Ingredients (quantities will depend on how many you want to make):

Wholemeal English muffins (toasted)

Red capsicum (cut up and blackened under grill, then placed in plastic bag to sweat before removing skin)

Eggplant (cut into rounds, drizzled with olive oil and grilled until tender)

Large field mushrooms (drizzled with olive oil and baked until tender)

Baby spinach leaves

Avocado (mashed)

Goats cheese

Basil leaves

Directions

Spread mashed avocado on top of bottom half of toasted muffin. Stacks veggies on top, finishing with goat’s cheese. Place other half of muffin on top.

Eat!

  1. Oo… this looks so delicious! Love me some veggie stacks! Have been thinking about making it for my vegetarian friend, but always wondered how to make it so that it had some structural integrity. I bet mine will just collapse! And thanks for following my blog! Hope you enjoy it!
